Tennessee isn’t the most obvious place for a cheesemaking tradition, but we believed it could belong. So it felt right to name our first variety for the Cumberland Plateau, a beautiful region of cliffs and canyons. The Sequatchie Valley is like a big meadow in the middle, and our Creamery is surrounded by forested coves, high crags, and glittering caves. You might discover something new in any direction - maybe a mysterious creature, or maybe a timeless food.
Cumberland is a trusty Alpine-style cheese like Tomme de Savoie, but its remarkable rind and pleasing textures are an echo from the Tennessee forest. Tomme style cheeses have a straightforward way of capturing the places they represent, and Cumberland just keeps unfolding no matter how long you explore.
